Cambodian sweet 'n sour beef salad on rice noodles
Ingredients
- DRESSING
- 45ml fish sauce
- 10ml sugar
- 30ml lemon juice ??
- SALAD
- 100 g glass noodles (bean vermicelli)
- 15ml oil
- 400g beef fillet
- 2 shallots, thinly sliced
- 2 green chillies, finely chopped
- 2 garlic cloves, finely chopped
- few mint leaves, chopped
- 150g watercress ?
Instructions
DRESSING
Blend the ingredients and set aside.
SALAD
Prepare the noodles according to the packet instructions.
Heat the oil in a large pan until very hot and rapidly stir-fry the steak for about five minutes until brown on the outside and still pink on the inside.
Remove from the pan and leave to rest for 10 minutes before slicing as thinly as possible.
Pour the dressing over the meat, add the remaining salad ingredients and toss.
